Whetstones, like other sharpening stones, usually feature two sides with separate grit: one coarse, and the other fine. It's important to know that you're removing metal with each pass of the knife, so using the correct side for the job is a must.
Advantages of diamond sharpening plates: They allow quick removal of material for grinding out chips and changing the base bevel of plane irons and chisels. Quick sharpening and material removal also in medium grit grades is another advantage.
For the first step in sharpening a very blunt knife, we recommend a coarse, 400-grit stone. For the first step in sharpening undamaged and regularly maintained knives, stones with 800-2000 grit are a good choice. For basic sharpening, it is best to use a 1000-grit sharpening stone.
If your whetstone has a coarse and fine side, begin with the coarse side. If you use two stones of different grit, start with the one with the lower grit number. Hold the knife with the handle in your dominant hand.
Diamond Sharpening Stone Abrasion Rates
For larger surface areas or to flatten the back of chisels and planes, it is best to use a 600 or even 1200 grit diamond sharpening stone.
