Whetstones, like other sharpening stones, usually feature two sides with separate grit: one coarse, and the other fine. It's important to know that you're removing metal with each pass of the knife, so using the correct side for the job is a must.
Can be used for sharpening TC, HSS and PM steels, which are difficult or impossible to work using other types of stone. The stones mostly keep their original shape, unlike other stones that wear with use and must be periodically re-flattened. They can also be used as flattening blocks for Japanese water stones.
When sharpening knives it is important to start with the right sharpening stone. With which grain size you need to start depends on the state of the knife. The blunter the knife, the coarser your stone needs to be, or the lower the grain size.
Keep same angle as knife bevel on the whetstone. The angle is 20 degrees for most knives. Stroke away from the body, alternating on each side of the knife. Light strokes will produce a finer edge.
The difference between sharpening stones, whetstones and ...
Another term often used for sharpening stones is whetstone. Both terms mean exactly the same. After all to whet is to sharpen! It is a rather dated term but one that is still used regularly.
Diamond sharpening stones can be used dry or wet, but wet is recommended. When using them wet, use water (not oil).
The Diamond stone has the advantage of being quick, and you may also use it to flatten your soaking or ceramic whetstone. The disadvantage is that it takes a lot of pre-sharpening before it reaches the specified grit on the package.
